@gallaugher a sampler afghan would be a good first project. You can do blocks that get sewn or crocheted together after. I’m in the middle of one made from patterns in this book, in general I’ve had good luck with patterns from this publisher: books.google.com/books/about/6

@gallaugher I would splice the cable and solder the ends to a proto board to make a breakout that connects to the pico or solder jumper wires to the cable wires to make a custom cable. Otherwise you will probably have some connection issues that will affect the image quality on the matrix
