@douglasvb yep, physical access attacks, but in my calculation it's the same class as BIOS/UEFI. initrd images can be forensically collected or signed so having /boot unencrypted is not such a big deal, IMHO.

@douglasvb As for disk encryption, you have to deal with GRUB + initrd on /boot and then the real kernel and / filesystem. It's straightforward if you leave /boot unencrypted and then mount an encrypted / partition.
If you're going to have multiple partitions and experiment, I'd leave /boot unencrypted just so you have a stable recovery environment. There are ways to have GRUB mount encrypted volumes but they may be brittle. (I thought about encrypted /boot on Linux but then realized I would need to write and print out documentation since I would have forgotten how I configured it 2 years into the future.)
If you need well documented FDE it's the two popular OSes or FreeBSD w/ZFS.
