Life-Changing Fried Cauliflower with Mint and Tamarind Dipping Sauce

Some vegetables that have a poor reputation because they have been over cooked or over-boiled in the past, have redeemed their reputations through roasting or frying. I am thinking of Brussels Sprouts and Cauliflower particularly, also Broccoli. I do love Cauli and Broccoli steamed gently but I also have nightmare recollections of how my mother cooked them.

BUT THIS! This is a life-altering Cauliflower recipe. This is REALLY GOOD, and you won’t believe it is vegetarian. Fool your friends!

In this recipe, cauliflower is deep fried in a spicy batter and breadcrumbs, then it is dipped in a sauce made from herbs and tamarind. The recipe is one of #Ottolenghi‘s from #PlentyMore. Here I made it with an egg-free chickpea flour batter which makes an excellent batter for deep frying.

Tugtupite is in its first year, and is nice as well, so I'd love to see it another year as well. This one seems to have as if an angel-like winged shape in the middle, for more blessings to Ye Olde MinCup. Or something to remind you of dioptase's use in art, which has often depicted angels and so much more else.

There are 9000 year old statues with eyes coloured with dioptase pigment out there! Al-Ghaizan statues, some bicephalic, two-headed weirdoes you gotta love just as much as human creativity. :D

It's honestly amazing, so please tell everyone and get votes in for this contender!Here again with emerandine, the "rock moss" covered piece here may somewhat resemble a horse or a pony rearing its head up at the top right, galloping feet or legs formed against the shadows under the "stomach". If you squint, or use your imagination.

A somewhat fish- or dolphin nose shaped bit at the top left, it's an earthier looking rock otherwise, with the brown base seen before already. This one has emerandine and dioptase but it looks even more like mossy patches and miniature plants on the ground here. Colours range from the deeper, cooler or bluer green on the right to lighter, earthy greens in the middle, with a more brownish tone to the "head" of the fish.

There are bits that look further like tiny grass or moss mixed in even on the entire moss rock itself.

The universe seems stacked against brassicas.

I was expecting an army of slugs, however it was cabbage worms that chomped some of my cauliflowers down to the ribs.

They're sneaky bastards so I smooshed every single one I could find and then showered all the plants in neem oil solution.

I have no idea what I'm doing.

Look at these !

A medley cauliflower in a spectrum of people, gold and green.
My mom’s work commute was an hour and a little bit each way. The lunch hour she used for dinner food shopping of that day. On public transportation during the evening rush hour, she would carry home two gigantic grocery bags. Every day.

That’s why the idea of carrying home groceries from Flushing didn’t seem ridiculous to me. Unlike her, I would always be able to get a seat on the subway and on the bus.

This dinner is a result of my Flushing catch. The idea of it pushed off the Restaurant-Style Cauliflower Dry Pot recipe from The Woks of Life and took on a life of its own.

In the original recipe, quickly stir-fried sliced small red onion and cauliflower are mixed with the fat rendered from an optional tiny piece of pork belly flavored with garlic, ginger, and chilies. Then, there are doubanjian, oyster sauce, Shaoxing wine, soy sauce, sugar, and scallions. And some red bell pepper for extra crunch and color.

I bought the correct — Chinese — cauliflower. Its florets are not as dense and sop up sauces better than the traditional ones. That cauliflower triggered our dinner plans.

In my version, small red onion became large, optional tiny piece of pork belly became a mandatory pound and some. Instead of 1/2 cup chopped red bell pepper, I added 1 lb of sliced fresh broad beans. Six dried chilies turned into a cup of chopped — sort of Chongqing style. Of course quantity of all the aromatics went up. And — cherry on top — I added a full bag of an amazing fried tofu from the New World Mall on Roosevelt Ave.

How’s that for a Chinese Nonna freeform cooking?

And what about the decor where Chinese cauliflower is settled atop Mexican placemats next to Russian napkins and served with an Italian tomato spoon? We’re dining in style.
