The Dark Lord's Spiced Gingerbread Pancakes
Ingredients
2 Cups Flour
1 Tbsp Baking Powder
1 tsp Ground Ginger
1 tsp Ground Cinnamon
1/4 tsp Ground Cloves
Pinch of Salt
3 Eggs
1 Cup Milk
4 Tbsp Butter (divided)
3 Tbsp Molasses
2 1/2 Tbsp Brown Sugar
1/2 Teaspoon Vanilla Extract
Instructions
Mix the dry ingredients:
In a large bowl, mix together the flour, baking powder, ground ginger, cinnamon, cloves, and a pinch of salt. Use a trusty whisk to blend these dry elements until the spices are well distributed.
Mix the wet ingredients:
In a smaller, polished bowl, combine 2 tablespoons of melted butter, dark molasses, the eggs, a cup of milk, and vanilla extract. Whisk the ingredients together until they harmonize into a smooth, amber potion.
Blend it all together:
Make a well in the center of the dry mixture. Pour the wet ingredients into the well. Using a wooden spoon, fold the mixture gently until dry ingredients are just incorporated. Remember, a few lumps ensure fluffy, magical pancakes.
Heating the Pan:
Heat a well-seasoned cast iron pan over a steady medium-low flame. Once the pan is warm, add a teaspoon of the remaining butter. Let it sizzle and melt, creating a pool of golden bubbles. If it browns a little, that's okay, but don't let it burn.
Pouring the Pancakes:
