Before and after, Easter Pizza. Served cold. Did not bust open this year, which always seems to be a topic of discussion as to why when it does (I think it has to do with leaving enough room for the filling to expand …. quite a bit of cheese in there)

Torta Pasqualina (which originated in Liguria) 🤩 never disappoints: spinach, ricotta, eggs (strategically placed), in a homemade crust. Who would like a slice?

Overhead view of the Torta Pasqualina on a round glass plate with a silver ruffled edge. The plate is crafted by Annie Glass in California.A close-up view of a slice of the torta, showing crust on top and the center which is filled with spinach and ricotta. A cooked egg, sliced in half is in the center of each piece of pie. The pie is sitting on a clear glass plate. A collage showing all the steps to making the torta: the baking pan is lined with parchment paper, and then filled with homemade pastry. A ricotta-spinach mixture is placed in the center and then four raw eggs are strategically placed on the top which is then covered with grated cheese, then topped with another piece of pie crust and dusted with parmesan cheese. The torta is baked and the eggs are cooked during the process. There are overhead views of the pie during and after the cooking process, and a slice of pie, depicting the cooked, sliced egg on a plate.
