This one came out reeeally yummy 🀀

🍝 One pot pasta:
- Garlic
- Onion
- EVOO
- Ground beef
- Salt
- Oregano
- Red pepper flakes
- 1 scoop tomato paste
- 1 scoop beef bouillon
- Can of crushed tomatoes
- Half a glass of water
- Dry pasta directly into pot (I used linguine)
- Let simmer in 425Β° oven uncovered ~15 mins, stirring every 5 mins
- Remove, stir again, serve
- Grate fresh parmigiano or pecorino over meal

I also bought a fresh baguette πŸ₯– and cut it into slices.

- Fresh ground black pepper
- Rosemary
- Fresh parsley
- EVOO

One of our Vegan Easy Challenge participants shared their concern about the possibility of not feeling full while transitioning to vegan...

If you're thinking the same, here's what we suggest:

Depending on what you're used to consuming, it could take a few days to figure out what foods you need to eat to ensure you're consuming the calories you need to feel satisfied, especially if you are making considerable changes to your diet. So:

🌟 Include plant protein in your main meals because protein helps us feel satisfied and full. Plant proteins include tofu, tempeh, beans, lentils, peas, soy milk etc. There's also protein in whole nuts, seeds, as well as nut & seed butters (peanut butter, tahini, etc) which are calorie dense.

🌟 Include healthy fats like avocado (on toast or in salads, etc), nut/seed butters and some oils used sparingly such as cold-pressed flaxseed and olive oil.

🌟 Consume fibre-rich whole foods as they keep us full. Foods such as a variety of vegetables, legumes, nuts/seeds, fruits, which are also rich in micronutrients.

🌟 Try combining the above three (plant protein, fibre-rich foods and healthy fats) in most of your meals to help with satiety.
