It is Spanish omelette weather.

Finally got started on the fresh frozen galangal, coriander, fish stock, white wine vinegar, lemon juice, pepper, a little turmeric and a dash of kashmiri chili, to go along with the haddock, veg, potatoes and lemongrass.

For years I did Asturian stew as read. beans and chorizo and black sausage and maybe pork when I've got it.
Then I watched a Spaniard first do a vegetable broth, take the veg and blend it, cook the beans in the water, then add that back in.
That's what I'm doing tonight.
Still working on the fantasy paella.
I get a feeling the Koshari recipes I've seen don't properly encapsulate the phenomena.
I did a couple to the letter, and while they were ok, getting a bit clever with the broth is really the way to go.
No fresh veg this week, but I do have black olives and anchovies.
Pan pizza finished off in the microwave grill. not perfect but tasty.
Finally got some decent size garlic bulbs. They've been piddly for months and these a proper chunky.

Chana dhal tonight, using the ratatouille for veg. Frying pureed tomato separately for a really thick sauce.

Then in goes water and I'm going to make a tea with whole roasted spices before the rice goes in.
Latest iteration of the chicken chorizo arroz.
I don't have any cream, so I added milk powder to the broth, mixed yoghurt and vinegar, and slowly poured the broth into the mixture to blend it.
I still reckon frying fresh peppers in oil is the best thing you can do to kick up the flavour a notch.

I used the wrong pan for the oat cutlets, and they didn't get a good crust.
Other than that, turned out fine.
(edit) oat cutlets, jollof rice, fried eggs and gherkin slices with bbq sauce.
It's been all curries the last week or so, time for a change.
