My afternoon rainy day cake is done!

This is my invention from a few years ago called #pinupka. It's a mash-up of a pineapple upside down cake and a fruit crumble. The crumble topping is put down first then the pineapple and cake batter.

Really tasty.

I find pineapples risky and difficult to cut.

I didn't know such a thing as a spiral pineapple slicer existed until somebody at work told me. Easy peasey and safe. Price about $10.

Sometimes supermarkets will discount whole pineapples down to the low $3 range. I don't think that many people buy them.

NAVY GROGU

¾ oz lime juice
¾ oz pineapple juice
¼ oz SC Mai Tai syrup
a few drops of blue curaçao
¼ oz allspice dram
¼ oz falernum
1 oz overproof Pot Still Lightly Aged Rum ❶
1 oz Rhum Agricole Blanc ❼

Garnish: lime wedge, maraschino cherry
Method: Combine all ingredients in a shaker with ice. Shake, open pour, and top with more ice. Spear two cherries for the eyes, and use two lime wedges as your garnish so it looks as if the Force is strong with this one.

May the 4th be with you! I saw this one years ago from servedbysoberon on IG and finally got around to making it on the right day ;) A riff on the tiki classic, the Navy Grog. But Star Wars!

PIÑATA

3 oz pineapple juice
1 oz lemon juice
¼ oz SC demerara syrup
1 oz ginger liqueur
½ oz St. Elizabeth allspice dram
1 oz Black Blended Rum ❺
1 oz Blended Lightly Aged Rum ❷

Garnish: grated nutmeg
Method: Add all the ingredients to a drink mixer tin. Fill with 12 ounces of crushed ice and 4 to 6 agitator cubes. Flash blend and open pour into a hollowed-out pineapple. Garnish with grated nutmeg.

A real job to hollow out the pineapple, but the fun vessel makes it worth it! Also no harm in throwing an extra straw in there for a party of two who won't mind sharing.

I made a pineapple hard cider with apple juice and pineapple juice. It fermented dry and is quite bitter, but back sweetened with sugar makes it very delicious. A good experiment. I'll make this again, for sure. The grapefruit cider experiment did not go as well. Too bitter.
