It’s a Fireworks Focaccia Garden for Fourth of July! Hope you all enjoyed the holiday with lots of family, friends & fireworks to celebrate the day. I always enjoy bringing the garden into my own kitchen. 🌿🌱🍃

Croxetti (aka Corzetti) is a coin-medallion pasta from Liguria imprinted with a family coat of arms, a tradition dating back to the Renaissance. Cooks would customize the pasta with a wooden stamp at the request of aristocrats who felt the need to distinguish themselves from the poor.
Here it is served with a walnut-pesto cream sauce with chicken.

The first of the Wish Farms pineberries have arrived: Pink-a-Boo Pineberry, which taste like a cross between pineapple and strawberry. 🤩 I like to make a pretty salad with these, come Valentine's Day.

Yes, it's me again, playing with food: my favorite Paul Bocuse Mac & Cheese using Perciatelli pasta... and of course another gardenscape to top it off because I just can't resist bringing garden design to the kitchen table.

Serious cooks have ways of keeping their spices organized. I had a spice rack built on my pantry door, and they're alphabetized top to bottom. The jars have easy to read labels with a world map on the cap that highlights the area where the spice is most prevalently used. When I immersed myself in international cooking a few decades ago, I felt this was the best way to keep my spices straight.

Mise en place: wild rice ingredients with thyme and fennel using spice labels I had to design myself because there just isn't anything else out there that I find adequate for an international kitchen home chef. Served with a paprika pork chop and leek-broccoli soup.

Well, I still have a lot of work to do to figure this out. I believe I've tried every recipe and technique while trying to master the . I'm getting closer, but sheesh, this is so AWKWARD. I sliced a large sweet potato in half, then sliced each half crosswise and wrapped it around a very large carrot with kitchen string in an attempt to "roll" it... it KIND OF worked? I smeared them with minced garlic-butter and some spices. Tasty, but needs finessing, practice.

Easy sheet pan asparagus: lay asparagus in a single row on parchment paper, cut the cherry tomatoes in half and drop them in the end zone. Bake at 400 for 10-12 minutes, remove and add some mozzarella cheese, then pop back into the oven til the cheese is golden. Serve with basil chiffonade and kalamata olives.

Mise en place. Condiments to be served with lemongrass-ginger and coconut-chicken curry. One of my favorite winter meals and fun to serve to guests. Included here is a fresh coriander-mint chutney and a lemongrass-ginger paste which can be added to individual bowls according to taste.


Mice en place means "everything in its place." Pictured here from top left, clockwise: chopped green beans, diced pineapple, fresh coriander-mint chutney, fresh lemongrass-ginger paste, carrot spirals and the center: cooked vermicelli noodles. These are all options to add to a bowl of piping hot chicken coconut curry with a lemongrass-ginger soup base.

We had family visiting this Christmas - first time in SO LONG! So I did a LOT of cooking and it was a blast. Here's our Christmas Day charcuterie nibbles shaped like a wreath.

It's become a Christmas family-favorite: a French-Canadian Tourtière. Using homemade pie crust, the filling is a combination of ground veal, lamb and bison with spices: cinnamon, allspice, nutmeg, and cardamom.


The meat pie is shown with a golden crust, and the pie is sitting on a dishcloth with pictures of fruit. In the center of the pie is the cut-out of a moose. I used a moose cookie-cutter to create the shape.

As a garden designer, my work often follows me into the kitchen where I obsessively put gardenscapes on just about anything: salads, pizzas, mac and cheese (pictured), soups (floating gardens), dinner rolls and focaccia. This happens more often during the holidays when I have time off. This is my therapy.

Before baking: a mac and cheese garden arranged on top, created with asparagus for flower stalks, mini bell peppers and tomatoes for flowers, red onion slivers for flowers, and little mushrooms and chives for grasses, dotted with toasted pine nuts for stones. A few olives and parsley leaves adorn the flower stems. The finished product: a baked mac and cheese with roasted vegetables, herbs, olives and nuts.
