So many grapes in today's produce rescue. I have juiced a bunch. Some of the leftover pulp went into a fruit salad. Other pulp I'll use in a fruit leather experiment. Also have a couple trays in the oven in a raisin experiment. It's a chance to try some ideas from Put 'Em Up by Sherri Brooks Vinton.

I was going to use a bottle of red wine to dye eggs tomorrow, but now I'm thinking of just trying grape juice with vinegar.

This afternoon I made a couple of jars of basic brined pickles. I'll let the cucumbers soak up the brine for a few days and then test how they turned out.

I made the poor life choice of planting some seedlings in the spring and now I have more cucumbers than I know what to do with. I've been putting them in a lot of meals and giving them away but they just keep coming.

So, mom-in-law gifted us with canning supplies and a food dehydrator. Looking forward to getting back into preserving food again (we had taken a canning course a few years ago, but never bought the supplies. We mostly stick with pickled beets and sauerkraut and pickles, which can be done without the supplies, though they have to be kept in the refrigerator and don't keep as long). And, in the spirit of being neighborly, I will be offering use of the food dehydrator with my neighbors, especially the one growing edible mushrooms!

Garden season in Saskatchewan is almost over. With most of the production in the house it has to be preserved. Some of our favourite ways to store our vegetables: sauerkraut, freezing, fermenting.
The large jar is the fermentation stage of what I hope is another great batch of hot sauce.

Canstravaganza! A view of part of the shelving in my garage dedicated to my canning output.

Last night I got strange spasms in my left hand that went clear up my forearm. I attribute it to an entire weekend of food prep, holding heavy pans with my left hand so I could do things with my right, general overuse. My husband had to uncurl my contracted thumb slowly and hold it out to end the worst spasms.

I'm making more #Teochew #Chinese #preserved #SaltedLimes today. We use same method as our families overseas have used, for generations. The link below is similar to what I do. We have several jars of assorted fruit based salted preserves sitting in our backyard on our natural fermentation table.

We use salted limes & salted lemons & salted plums year round, to make traditional fermented hot/cold drinks & for cooking purposes.

Expert home canning folk, I want to make this recipe larderlove.com/cranberry-gin-j to use boozy cranberries from making their cranberry gin last year for gifts. Asked about hot water canning and they said it isn't done in UK/Europe and the preserves keep without it. Your thoughts and recommendations? (And why don't they use this process? Preserving #ginger & #SourPlums using simple #solar power with #repurposed takeout container & old serving platter. The ginger is #fermenting in the sun, after being soaked in #fermented salty mung bean juices. Sour plums are on day 3 of dehydrating in sun & coming along nicely (coarse salt & cane sugar used).

summer in Brisbane means the #basil will bolt. before that happens harvest and preserve the leaves while they are abundant. to keep them green and fresh, strip the stems off, blanch briefly in boiling water, cool in icy water, and pat dry. then pack the wilted leaves in a freezer bag without too much air. now freeze it. your (almost) fresh basil will keep for months. #preservingfood #kitchengarden
