Dracula's Nightcap

½ oz lemon juice
¼ oz simple syrup
½ oz red beet juice
¾ oz tawny port
1½ oz mezcal reposado
2 dashes Angostura bitters

Garnish: salt rim
Method: Salt the coupe with black salt. Combine all ingredients in a mixing glass and stir with ice. Double strain into coupe.

An original of mine. I consider it a margarita riff and got inspired by the carrot-based Power Up Technique (look through my profile). It's very earthy, which pairs well with the mezcal. Plus, the color makes it perfect for Halloween!

¼ oz cinnamon syrup
½ oz Punt e Mes
¼ oz tawny port
2 oz Blended Aged Rum ❸
6 drops Bittermens 'Elemakule Tiki bitters

Garnish: maraschino cherry
Method: Stir and strain into a chilled coupe.

Think cinnamon rum negroni and you’ve got it! Substitute Punt e Mes with half vermouth rosso, half Campari (quarter oz each). I didn't have any cherries the day I mixed this one, so I went with a cinnamon stick. Found in the Smuggler's Cove book, page 118.

The Dead Reckoning

1 oz seltzer
1 oz lemon juice
1 oz pineapple juice
½ oz maple syrup
½ oz SC vanilla brandy*
½ oz tawny port
2 oz Blended Aged Rum ❸
1 dash Angostura bitters

Add ice/seltzer to glass, shake, strain, top with ice.
Garnish: pineapple frond, mint sprig, lemon peel

This is from Smuggler's Cove and is a great one for summer. The vanilla brandy really steps to the front as the ice melts.

* Vanilla Brandy: Split a vanilla bean lengthwise, cut into three equal pieces, and add the pieces to a bottle of brandy. Reseal the bottle, and let rest at room temperature for two weeks, before removing the beans and discarding. Add 2 ounces of demerara syrup to the brandy and mix well. Store in the original brandy bottle for a year or more.

The 2007 Colheita from Romaneira (bottled in 2021, $60 then) isn't quite a 20-year Tawny and is more than a 10--that's the joy of vintage-indicated Tawnies. They are what they are. Reasonably deep in this big vintage, it is fresh, sweet, juicy and delicious. Complexity is not the strong suit--it isn't that old as Tawnies go--but the waves of caramel and chocolate are irresistible. This had 120 grams of sugar and a real cork. #wine #winesofportugal #port #tawnyport
