I never heard of sweetbreads until I got a copy of Mastering the Art of French Cooking after college (having nothing useful to do with my history degree). #JuliaChild said that one of the glands the French used was prohibited by the USDA, IIRC. My paternal grandfather was French, but his family didn’t bring much French cuisine to California. We did eat a redacted version of #Tripes à la mode de Caen, but we only used honeycomb tripe from beef.
