Solid outing for the first at home #vegan meal delivery. Miso squash bowl with miso glazed tofu. Probably higher in sodium than I’d normally like but the flavor was baller. 9 grams of fiber, 20 grams of protein, 550 calories, way better than what I’d cook for myself.

My son made 9 balls of pizza dough, and let me have one.

Here's are the ingredients (I didn't measure anything, so these are all guesses):
Dough ball
A dusting of cornmeal
1 or 2 tbsp canola oil
4 cloves garlic
Olive oil, probably 2 or 3 tbsp
1 jalapeño
4 or so cherry tomatoes
Roughly 1 cup violife mozzarella

Preheat oven to 475F, while the oven is preheating, crush the garlic, chop the jalapeño, mix in a small saucepan with the olive oil, and lightly cook. Start warming the cast iron skillet on another burner, add the canola oil and cornmeal. Stretch the dough however you like, I'm lazy, so I just do my best in the skillet. It's probably better to stretch the dough on a cutting board and transfer it. Cook the crust a little on the stove top (it doesn't need to cook through, just until the oil gets bubbly and the edges start to cook, try not to heat the oil to the smoke point). Next, spread the garlic oil jalapeño mix on the crust, slice the tomatoes, and add to the pizza. Top with cheese. Place the skillet in the oven.

I set the timer for 16 minutes but ended up cooking an additional 2 minutes to make sure the crust was a nice golden brown.
