How gorgeous are these #beautyberries? Apparently you can make them into a pretty pink jelly but I haven’t tried it yet! #foraging #nature #berries #purple #herbalism #wildfood

SIlverweed bannocks.

I like the sort of person who just casually states "Barley flour didn’t seem obtainable in our small town but I had grown some barley a while back and luckily still had some barley ears sitting in a tub."

Recent Chicory flowers (great to sprinkle on salads); stinging nettles (great for risotto, tortelloni fillers, gnocchi, frittata, croquettes and much more); wild blueberries (or bilberries) super tasty and full of antioxidants.

Snippets from work. Weekend event with 700 (was it 900?) 'Taste buds' members coming from all over the world to catch a glimpse of what we do inside our food production factory and at the restaurant.

Late baptism of eating living wood ants, I'm convinced!

We held the foraging station with Alex, introducing what we do and how we do it. It was fun and interesting to see where people's curiosity was at. We had a new group of ten-ish people visiting us every 15 min non stop for three days in a row. 🤡

More How to distinguish between Vaccinium Myrtillus - European blueberry (bilberry) and Vaccinium Uliginosum - bog blueberry. the bog blueberry: lighter color, pale inside, rounded leaf. The real and precious Vaccinium Myrtillus: darker, with juicy purple flesh and longer pointed leaves that can turn red. The close-up pics show you the whole berries, and the same berries squashed. Go for the dark one. And the bog one? Edible but limit yourself as it can be intoxicating.

Foraging for edible flowers: chicory! Beautiful blue petals, perfect to toss on salads, especially fennel salad, which is delicious but very… white! Pick from fields, away from the road cookingwithflowers.blogspot.co

Native edible aquatic plant. American white water lilies at Prospect Lake in the Highlands. Nymphaea odorata. These are the only native water lilies in this area of the world. Other water lilies you see are invasive introduced species.
Beavers & muskrats like eating their stems.
Their seeds, flowers & rhizomes can all be eaten raw or cooked. Roots can be boiled to create a medicinal liquid to treat sore throats (gargle it) & for diarrhea (drink it). Many Indigenous peoples used the rhizomes to treat coughs/colds & crushed stems can be put on teeth to treat toothaches.

A vertical shot showcases water lilies gracefully floating on a pond. Emerald green lily pads blanket the water's surface, creating a dense backdrop. The focal point is the pristine white water lilies, their delicate petals catching the light. Each lily features a bright yellow center filled with stamens.
