They're identifying which copper pair is carrying the data signal they want to intercept by ear.

On the helmet is a beat up "UNION YES" sticker, next to a very large San Jose Sharks sticker. The former is good social engineering practice; the latter is noteworthy because the Sharks were a new expansion team in the 91-92 season, so this was bleeding-edge Silicon Valley awareness.
