It's another #fermentation day. For #kombucha processing, I'm going with strawberry on the second fermentation this time. I've never tried that before, so I'm curious how it will taste. I'll also be getting another batch of whole milk #yogurt going this evening to incubate over night.

And for something completely new, I'm trying fermenting #garlic in #honey. The sources I referenced indicated no weight was needed, but my garlic cloves are floating in the honey! We'll see how this goes...

#Scientists revive old #Bulgarian #recipe to make #yogurt with ants

Ants carry lactic and acetic acid bacteria that help coagulate milk, as well as formic acid to acidify it.

by Jennifer Ouellette – Oct 3, 2025

"Fermenting milk to make yogurt, cheeses, or kefir is an ancient practice, and different cultures have their own traditional methods, often preserved in oral histories. The forests of #Bulgaria and #Turkey have an abundance of #RedWoodAnts, for instance, so a time-honored Bulgarian yogurt-making practice involves dropping a few live ants (or crushed-up ant eggs) into the milk to jump-start fermentation. Scientists have now figured out why the ants are so effective in making edible yogurt, according to a paper published in the journal iScience. The authors even collaborated with chefs to create modern recipes using ant yogurt."

I have become a fan of Skyr, the Icelandic form of yogurt. I like Icelandic Provisions a lot, but is it worth seeking out other brands? (I did not care for Siggi's.)

I think Painterland Sisters (which I keep calling Painter Sisterland, because I'm the Queen of spoonerisms) is available at Sprouts.

In the non-skyr arena, I didn't like Stonyfield Farms, though everyone else seems to think it's the best. I'd like to try Maple Hill, which will also necessitate a trip to Sprouts or Fresh Market. Both Trader Joe's and Whole Foods are 45 minutes away from me.

Right, literally torture ants to *kick start* yogurt making (and then bury milk in an ant nest for 26 hours). 🤦‍♂️

I know, for science, but still screams Ig Nobel. 🏆
