Today's adventure will be making kimchi and figuring out what to do with my bok choy and shishito peppers.
I'm thinking of adding some of the Bok Choy to the kimchi... I've only got normal green cabbage, not Napa... so it's already bastardized-- not worried about that.
What should I do with the rest of the Bok Choy, though? My husband and I bought a bunch of heads, and since I forgot to cook him some to take to work this week, I have to figure out what to do with it. I don't particularly want to just stir fry it, but I suppose I could.
As for the shishitos... I'm not a big fan, myself... that's my husband. I gotta figure out something I can do that will hold til Friday at the very least.
FUCK. I also have a butternut squash and two acorn squash I need to figure out what to do with.
Help?!

Our son isn't (or at least wasn't) a big coucous fan. So it's been a few years since I've cooked with it. Cracked it out tonight, so we'll see tonight just how long you can store couscous before it gets stale.

Low Fodmap Chicken Tacos
Filling: Leftover grilled chicken, garlic infused oil, cumin, salt, green onions, crumbled goat cheese, grapes and cilantro. Optional: dollop of plain Greek yogurt
Toast a corn tortilla and cover in shredded cheese. Pop in filling and enjoy! I have them for breakfast.

Decided I wanted to look up what IHOP blintzes were made of and, surprisingly, literally nothing expensive. The "special cheese blend" is literally cottage cheese and cream cheese.
Naturally I CBA to make actual crepes, so I bought some flour tortillas.
Nuked them in the microwave, added a little sour cream on top, topped it off with strawberry preserves, and yep, basically the same. Definitely better with crepes, though. Very much a poor man's solution, but not bad. XD
