Backdrop:
Tonight it was time for tortillas and beans. That is, I sauteed an onion and a passel of small sweet peppers,. When this was browned, I added a somewhat-drained can of black beans and a good shake of ancho seeds.
Then i looked in the freezer for tortillas; nary a one. Recently we've been buying pricey but tasty sprouted-grain Ezekiel tortillas at Mom's, a local organic-food chain. I wasn't heading out again, so i checked out our jars of masa harina, which are well over a decade old. Didn't bother with the tortilladera, or even the plastic-bag-and-rolling-pin trick., just hand-pressed them. Nice dinner, a little cheddar melted on top, not Mexican cheese. A little butter lettuce on the side.
Question: any food value left in the masa? Any unhealthful thingies develop as it goes from fresh to old to ancient? Or does the lime treatment make it impervious to all that? I noticed a wee bit of bitterness in a bite or two, but not when I was nibbling at the one leftover tortilla.
