Ethiopia is represented by Atakilt Wat (Ethiopian cabbage). I’ve yet to find a variation on cabbage with carrots, potatoes, and onions that was anything less than delicious! So comforting!

Eswatini is represented by Sinkhwa Sembila (Mealie/Corn Bread). Traditionally, this would have been steamed but now, it’s often prepared in the oven. It’s almost like a pudding. Super easy to make. I made small ones in a corn bread pan and one big one (pictured here). Delicious and easy. Served with honey.

Eswatini is represented by Liphalishi (Porridge) with Wild Spinach/Vegetable (Bok Choy). Peanut butter and dark leafy greens are always delicious! First time adding potatoes. So good!

Estonia is represented by Meeküpsised (very simple honey cookies). These were unbelievably easy to make. I have not tasted anything like them before. Over the course of finishing off the batch, my feelings about these have evolved. Very interesting. I had the last one this afternoon with tea and I’m still not sure what to think. I am enjoying my concept of a cookie being challenged!

Estonia represented by Mülgipuder (potato and groats mash) with pork, pickles, sauteed onions, and sour cream. Potatoes are my love language. This was so good and so easy. The leftovers pan fried until they get crispy have been divine.

Eritrea is represented by Eritrean Vegetable Bowl, Tsebhi Birsen (Spicy Lentils), and Taita (Eritrean Flatbread). Very tasty. I particularly enjoyed the flatbread! The vegetable bowl is comfort food.
