I have been left in charge of banana bread, because my nose is better than a timer for judging doneness.
That's fine, but my nose said it's getting there when the timer says 30 mins to go.
The issue? The banana bread is too big for the oven, too close to the burner. I have covered it with alumin(i)um foil. For good measure, I also rotated the baking pan, since I had the oven open anyway. We'll see how it goes.

I haven’t made banana bread in what feels like six months at least. Finally making some again and the house smells great. I use the “A to Z Bread” recipe, with bananas as the B but also sometimes add other fillings to make up the full 2 cups of “A to Z” ingredients. When I have them, I aslo like to add chocolcate chips.

A little while ago, I baked sweet banana bread in the breadmaker's cake setting. I put in a blueberry snack that I cut into small bits. I would have used some ground hazelnuts too, but we couldn't afford them.
Unfortunately it turned out very wet (deutsch: klitschig), and didn't rise, most likely because I used frozen instead of fresh bananas. I had thawed them in the microwave.
I was sad, but I didn't want to throw it away, so I froze the banana bread. Today, I ate some. I toasted it, which made it a bit better (still wet though 😔). Well, not every kitchen adventure is a success, but that's how we learn.

- 3 (overrijpe) fijngeprakte bananen
- 75 gr gesmolten boter (of margarine)
Dan erdoor roeren
- 3/4 cup rietsuiker
- 1/8 cup bruine basterdsuiker
- 1 geklutst ei
- snuf zout
- 1 tl cacaopoeder
- 1 tl rum
- ³/₄ tl soda
- 1 ¹/₂ cup (230 gr) bloem
Beslag in ingevet cakeblik
Bestrooien met nog een beetje rietsuiker voor krokant laagje
ca 50 min in de oven
