After kneading temperature dough was 25C, proofing dough 1h at ambiant temperature 21C with two coild foldings, divided (600g), rest the divided dough for 20 min, shaped, then final proofing 10 min in bread basket
baked in household oven at 250C 40 min in iron dish
bread is less aerated and bubbles size are smaller than previous TH72% bread, likely due to too much coild foldings and/or unsuitable proofing, but crumb is so good and soft

De jaarlijks paasmannetjes staan weer klaar om opgegeten te worden😊.
Deze traditie heb ik van huis meegenomen. Vroeger hadden wij ook altijd een paasontbijt met dit soort mannetjes (haasjes zo je wil). Ik bak ze zelf ook al weer ruim 30 jaar. Daarvan de laatste zeg 20 jaar telkens 4 mannetjes.

I unfortunately couldn't bake the cinnamon rolls that day so I popped them in the freezer mid-rise. Took them out last night to thaw and finish rising, then baked in morning. Heaven, and perfect for a Sunday. #baking #brioche #sourdough #dessert #cinnamon
