The porchetta is placed in a roasting pan with vegetables to roast from 8 a.m to 3 p.m., plus several minutes to rest outside the oven while wrapped. The vegetable accompaniments were cooked in last hour, and we ate at approximately 4 p.m. I also rendered the sauce.

The porchetta is roasted and allowed to rest outside the oven almost another hour (covered and kept warm) prior to removing the trussing and cutting the meat. It’s placed on good cutting board with drain wells, plus steel spikes that prevents the meat from slipping when slicing.

The porchetta is sliced with a long and heavy knife. Portions may crumble or fall apart, since this is well and long roasted. The fat from the belly of the pork keeps the meat moist.

This is large roast… use portions as needed, or save the remaining part for another meal. Roasted porchetta will refrigerate or freeze well for another application such as sandwiches or other variant serving. It’s almost impossible to overcook a porchetta since it’s wrapped in fatty pork belly.
