@alice @batchofcookies #CarrotCake is awesome. Soft coarse crumb with the separate distinct tactile sensations of plump raisins, walnut pieces, and grated cooked carrot. There’s also the naughty shiver of sinking your teeth through a generous layer of cream cheese frosting (which is not too sweet) to then encounter the moist cake beneath and accompanying gentle spiced aromas.

I’m going to have to make one now.

Mää leivoin! Taas. Tällä kertaa vegaanista, halusin testata yhtä porkkanakakun ohjetta ja hyväähän siitä tuli 😍 @LaraMint ei oo niin tuorejuustojen ystävä, ei edes näitten vegaanisten versioiden niin leikkasin hänelle tästä pohjasta erikseen omat palat. Oli kuulemma hyvää ilman mitään päällistä😋 Kuivakakkuahan se melkein onkin! Paitsi että tää kakku ei oo kuivaa nähnykkää🤭

Hieman eri tavalla käyttäyty toi vegaaninen Philadelphia tuorejuusto, meinaa pikkasen valua tuon kakun reunan yli ja oli juoksevamman oloista kun normi tuorejuusto 🤔 Tämmösiä huomiota tein.

Drop the filling with small spoonfuls in close array on top of the batter in the tin. You should use a spatula or clean fingers to get the drops of filling to touch each other to cover the battter completely. Then drop the remaining half of the batter with another small spoon in close array on top of the filling, and again use a spatula or fingers to join the batter drops to cover the filling completely.

Bake in a medium oven (350F = 175C = Gas Mark 4) for approximately 35 minutes, until a toothpick comes out clean.

And that is the recipe for Mrs. Dechter’s Carrot Cake.

DIRECTIONS

Lightly oil the bottom and sides of a 9 in x 13 in (23 cm x 33 cm) rectangular baking tin.

Mix the apricot jam, chopped pecans and cinnamon thoroughly to form a sticky paste that has coated the chopped nuts. Set aside the filling.

In another bowl, blend oil and sugar. Beat in eggs, then blend in vanilla and lemon juice. Gradually add baking powder and flour. Fold in grated carrot.

Note that this is a VERY sticky batter.

Spread roughly half of the batter into the bottom of the baking tin. The stickiness of the batter will require you to use a spatula or spreading knife to gently push the batter into the sides and corners of the tin. Once the batter is covering the entire bottom of the tin, you may want to give the tin a few quick shakes to even out the level of the batter.

MRS. DECHTER’S CARROT CAKE

INGREDIENTS

BATTER:
1 c (250 ml) vegetable oil
1 1/2 c (300 g) granulated sugar
2 eggs
1 tsp vanilla extract
juice of half a lemon
2 tsp baking powder
2 c (250 g) all-purpose flour
1 c grated carrot (about 2 to 3 large carrots, grated on the fine grating — not the punch-hole zester, but the next larger size of grating — side of box grater)

FILLING:
1 c (250 ml) apricot jam
1 c chopped pecans (just use a liquid measuring cup and fill to 250 ml; this should be close enough)
1/4 tsp cinnamon

My apologies for the delay, but I have finally put together a recipe of Mrs. Dechter's Carrot Cake that would make sense to someone who had never made it before.

This will take a few 'toots' to get through. Let me first point out (as is obvious from the photograph) that this is NOT the sort of carrot cake one typically sees today, which is usually a very sweet, dark-coloured cake with a very sweet, cream cheese-based frosting.

Mrs. Dechter's Carrot Cake is sweet, but certainly not sickly sweet (which is how I find most carrot cakes today).

I shall start in the next 'toot' with the ingredients (with metric/UK equivalents noted in parentheses).

This is Mrs. Dechter's Carrot Cake.

Mrs. Dechter was a friend of my great-grandmother. Roughly 80 or so years ago, in an era when many women — especially those in their 60s like my great-grandmother and Mrs. Dechter — did not work outside the home, these women often spent the early afternoon visiting their friends. On one such visit, Mrs. Dechter shared this cake with my great-grandmother, who asked for the recipe.

My great-grandmother then made the cake and served it to others. Another woman later asked for the recipe, and my great-grandmother gave it to her.

Several months on, this other woman had Mrs. Dechter over and served her the cake. Mrs. Dechter asked where she got the recipe, and she told her it came from my great-grandmother.

Shortly thereafter, Mrs. Dechter confronted my great-grandmother, telling her she had no right to share that recipe. They did not speak to each other for four years.

And that is the story behind Mrs. Dechter's Carrot Cake.
