"Here’s the truth, according to McMahon: There is no work visa available for foreign workers who milk New York’s 630,000 cows, birth their calves, take their temperatures and administer their shots.

"It’s difficult, dirty work most Americans do not want to do.

"Instead, dairy farmers build workforces in ways that evade federal laws. They file immigration work papers based on Social Security numbers they suspect are fake. They sometimes send thousands of dollars to workers and stomach the fact that it will likely be spent on coyotes or gang cartels to bring them across the border.
