Modern cell phone camera sensors are just remarkable. The photogrammetry that phones do after capture is incredible, but also extremely punched up. I am getting more and more annoyed with each generation of crispy fried processing that is happening by default.

This afternoon's panzerotti attempt looked kinda like the shape of a human heart. I'm not skilled enough to do it on purpose. Day 6 of the experimental dough: it's still usable, and I still have enough for one last experiment tonight. My production method improved after seeking guidance from YouTube videos.
I'm not a very big recipe poster but all that cauliflower is almost exclusively for this Kung Pao cauliflower recipe, which is basically just egg-battered (or sub vegetarian) deep fried cauliflower bites with a reduced commercial chili sauce. I'm going to sub in the black hungarian peppers for the jalapenos because they are similar in heat but look awesome (and I ripen most of my jalapenos.)
For two people, we usually make a half batch of cauliflower with a 3/4 of the sauce, which we improvise heavily on anyway. Plus rice.

Two and a half hours later, here is the finished product.
This turkey as you see has a beautiful color to it, and the skin is so crispy and so good!
There is no better way to have turkey than to deep fry it in an infrared oilless deep fryer!
Turkey has been injected and is now placed into the infrared(oilless) deep fryer where it will remain for nearly 3 hours.
This little guy will look and taste absolutely amazing after that time.

Some of the fair food that the wife and I had yesterday at the Carolina Classic Fair here in Winston Salem, NC.
This is a deep fried lemon pepper turkey wing with lemon pepper fries.
This was really good. The skin was crunchy and crispy and seasoned excellently. The fries were AMAZING and I don't often say that about fries.
