We got started a little late today, so I ran the oven on convect roast (instead of bake) because the manual says it reduces cooking time by 25%. Extra bonus: makes the skin crisp up, easier to scoop out the flesh!
We get a *ton* of leftovers, too - I'll finish parsing it to portion & freeze after lunch tomorrow. Fortunately it freezes well - and reheats well in a pot over a camp stove! - so this is our winter go-to for car-camping dinners...
