I noticed the old, dried-out dryad's saddle on this giant fallen tree first, then gasped when I walked around to the other side and found the very young ones (Cerioporus squamosus). These appear to be extremely common in my area, in both spring and fall, but they are easiest to spot once they're past prime. I harvested some older ones a while back and made mushroom broth with them and it was okay, but the flavor was already kind of weak by itself. It felt bad to cut into these, but I had to try them while I had a chance to catch them so young. I didn't take them all.

The buttons were easy to slice and I fried them up with just butter, salt and pepper. They held their texture and were chewy without being at all tough. The cucumbery scent disappeared, leaving a stronger cremini flavor with some nuttiness. I had leftovers today stirred into some spaghetti sauce, and it seemed like a great match for that. Now, the only trick will be spotting it this young!

The last few pictures are past-mature ones that are visible from a great distance. I will have lots of spots to check in the early spring.

I am reminded of the Aesop about the fox and the grapes. Let's pretend that tree full of chicken of the woods (Laetiporus sulphureus) looks dried-out and bug-eaten instead of tender and succulent. Fortunately, Mother Nature was generous enough to offer me a morsel at a more accessible height. I haven't had the chance to eat a lot of chicken of the woods yet, so I'm still tasting it in small amounts to make sure I'm not sensitive. And, this is the 5th flush of COTW that I've found in this area so far this season, so I'm sure I'll find more!

I cooked it same day, so you all get terrible dark kitchen photos. This was much younger and fresher than the chicken I've had before..I was surprised how moist and meatlike the raw mushroom felt! I let it fry with water until the water evaporated, and then fried to brownness with just butter, salt and pepper. The final result looks like dried-out bacon but was actually still moist and tender. It had a chickeny and bacony flavor with a surprising tanginess. I can't wait to get ahold of enough of this to actually cook a dish with it. #foraging #fungi #mushrooms #mushtodon #nature

Beamish valley had a large number of parasol mushrooms (Macrolepiota procera) at various stages. These are large mushrooms, hand to scale.
