Bottled honey wine today. 25 750ml bottles, and 2 1.5 liter bottles.

Grapes from the 100 year old vine. Honey from the bees. 5 gallons from the grapes and 5.5 lbs of honey plus water to top it up and another 1.7 lbs of honey to back sweeten it.

It tastes pretty good actually, not dry and not sweet.

Day 0 Pick grapes.

Day 1 smooshed grapes.

Day 10 grapes strained 5 gallons, 3.94 lbs of honey with water 1.25 gal added, and bentonite.

Racked on day 19,  topped up with 1.5 lbs honey in water totaling 64 fl oz.

Day 61 racked again, FG 1.001, added sorbate and de-gassed.

Day 62 back sweetened with 1.7 lbs honey in water totaling 32 oz fl oz. and pasteurized topping up the carboy and adding chitosan.

Day 64 added some pectic enzyme to get rid of what I suspect was pectin haze.

Day 90 Bottled.

Yellow pitahaya (dragon fruit) flower cactus sprawls its branches in three directions from atop an irregular wooden post that leans into the right side of the photo. A flower bud is visible at the tip of one branch of the cactus. Each branch has one developing fruit, and the fruit on the largest branch (in the foregrond in the upper left of the image) is turning yellow. At least two trees of Rollinia mucosa and one magenta-leafed ornamental plant are visible just behind the cactus, and various other fruit trees and other vegetation rise in the background of the image. November 29, 2025. We have an Indonesian hot sauce theme for this southern Minnesota snow day. The kitchen smells wonderful. Some of the fermented Sambal is getting a coconut and spices upgrade to become Sambal Kelapa. It’s four pint jars! The pan toasted coconut and spices upgrade is in the silver bowl. @econads There is one simple thing that took us a while to work out.

We tend to plant enough potatoes to keep us self-sufficient for around nine months of the year.

With such a lot of the same crop it makes the harvest easier if you plant seed potatoes over a period of weeks. A bed at a time.

This avoids the problem of having a garden full of potato beds that all need to be harvested and processed for storage at the same time.

A November 28, 2025 milestone. The shredded carrot fermentation is jarred after nine days on the countertop. The late November fermentation went well without fruit flies or bits of mold making a scene. The recipe is in the Kirsten Shockey ā€œFermented Vegetablesā€ cookbook. We use this in baked savory muffins and more. It’s also a substitute for sweet potatoes as we leave sweet potato growing to other gardeners. #fermentation, #minnesota, #growyourown, #nodig, #Carrots, #Zone4b

The Meyer lemons begin to ripen, little jewels on gray days.

I've found many cranberry sauce recipes call for oranges. I now always use lemons because they are getting ripe just in time for the holidays.

I made tea from scratch!
The black actually tasted like black, just very weak. The green was a lovely soft taste, but the hojicha had a somewhat off-putting aroma.

BOX ELDER — "A flour mill nearly a decade in the making was officially dedicated at Stone Child College on the #RockyBoyReservation on Wednesday, September 24, 2025, marking a significant milestone for tribal #FoodSovereignty and health initiatives.

"Tribal and state leaders joined agricultural experts for the ribbon cutting ceremony, celebrating the completion of a project that faced several delays, including disruptions from COVID.

"#BigSandy organic farmer Bob Quinn collaborated with tribal stakeholders to secure the grant funding that made the mill possible. Quinn specializes in ancient #KamutWheat, which is now being grown on the reservation and serves as the primary ingredient for the mill's flour production.

"The flour mill represents more than just agricultural infrastructure for the community. Leaders hope the locally-produced flour will contribute to improved health outcomes on the reservation, where #diabetes and other diet-related health issues are growing concerns.

"The project demonstrates the potential for tribal communities to develop #sustainable food systems that address both economic development and public health challenges through locally-controlled #agriculture.

" 'So we're able to actually grow it, bring it in, mill it, and now we're developing the food chain around it and getting it into the schools and getting it into the commodity program and into the lodge and to the casino. Any place where there's food distribution, we should be there with our with our food. And so #Kamut flour is just, one of the value added products that we're doing,' said Jason Belcourt, #RockyBoy Sustainability Coordinator."

Has anyone dried or otherwise preserved Cuban oregano (Coleus amboinicus)? I've found it easy to grow in pots but I some of the older plants could use some trimming back to encourage new growth. It would be nice to save the off-cuts for something if there is too much to use fresh.
