Being in Bengaluru has required 100% of my attention, so I couldn’t even post. Today is the last day, last idli breakfast. Every day I have been ordering filter coffee along with my breakfast. Today the waiter didn’t ask for my order after coming by with water (a default) and I was disappointed that I’d have to wait until I could flag him down again.

A few minutes later he came by, “Here’s your filter coffee ma’am”

Here is a hack to get a consistently fermented idli/dosa batter, even in winter: put it in the instant pot overnight on the "yogurt" setting! This winter I will try this with sourdough bread dough. Overnight would be probably be overkill for that one, but a few hours?

It’s still not as good as the perfect idli I had in Bengaluru. I doubt I’ll ever get it that good. But I can slowly make this very good, just like I slwoly learned to make other precise foods. #cooking #food #idli

The thing I think I cracked this time is cooking time and amount to put in the mold. In the instant pot, I need to warm the water on the sautee setting, then put in the stands, then set to pressure cook for 1 minute and separately set a timer for 10 minutes. After the 10 minutes are up, at which point the 1 minute steam will be done, manual release the steam. Then wait a moment to take them out of the molds. #cooking #food #idli

My best homemade idli so far this morning! The batter was fermented yesterday and was in the fridge. I think it keeps fermenring in the fridge, just slowly so if anything the batter was fluffier.
