Looked over the recipe for tomorrow's dinner. I've decided to use the Instant Pot so I'm not heating the kitchen for two and a half hours.
Besides, it means one pot to wash instead of two or three.
It's s braised beef with onion gravy, using chuck steak. Tough cut, benefits from pressure cooking or low-and-slow.
Just made a batch of creamer, since I'm about to run out of what I usually use. I had everything on hand for this, it took maybe a minute start to finish, and I put it in an airtight container with a label.
Dry skim milk powder, erithrytol powdered sweetener (like confectioner's/icing sugar), and coconut oil. Dassit. Blitz it to fine powder and put it away.
The sugar-free nondairy frozen dessert flavored with espresso powder is a resounding success.
I used the "shallow pan of hot water" trick to get it out of the ice cube tray, and parceled it into baggies for individual servings. Our smoothie maker did a decent job of rendering the cubes into a creamy texture. Had I let the cubes thaw a bit longer, it would've been perfect.
Delicious in any case. I'll make it again with different flavoring, likely cocoa powder. Strawberries. Blueberries. Yum.
My Carbe Diem pasta is here! Made from wheat, but with a fraction of the carbs. Maybe we can get away from the red lentil stuff, which is okay, but just different enough to make one say, "Hmm. Not really pasta."
Might try making a pasta salad to start. Good for lunches.
It's not cheap. I realize I'm privileged to be able to buy it. At the same time, I've been making my eating a priority. Once again I'm three pounds away from my original goal. I might shoot for five more once I get there. I clearly know how to maintain! ::wry smile::
Tended garden plots. Lots of tomatoes coming!
Made keto breakfast cereal. That goes in the fridge after it's cool. Single-serving containers. That will get me to Friday.
Made keto non-dairy frozen dessert. Full-fat coconut milk, erythritol, vanilla, salt, and I put in a scant half-teaspoon of espresso powder. That's in an ice cube tray. Once it's frozen, I can take out three or four cubes, partially thaw them, and drop them in a smoothie blender for soft-serve deliciousness.
Might make other flavors later. The worst part is having to use a full can of coconut milk plus a few ounces from another. Time to look for recipes that call for maybe 10 ounces of it . . . I know it won't keep that long.
