Pesto Portobello Burger! I've been on a burger bender lately and decided to use a bunch of left over ingredients from other meals made to create what has now become my absolute FAVORITE burger build! The Portobello cap is marinated in and brushed with an Italian spiced olive oil and balsamic marinade, then grilled to juicy perfection, and topped a slice of fresh mozzarella left over from a caprese I'd made a few days before. While waiting for the mushroom to grill, I used fresh homemade pesto to spead on both sides of a brioche bun, then lightly toasted it in the toaster oven. When time to assemble I used green leaf lettuce, the grilled portobello cap with melted mozzarella, a balsamic glaze, sliced fresh tomato, and sliced red onion! My mouth is still watering over this meal ๐คค๐คค๐คค
