The dominant odour in cider is 2-methyl 4-pentyl 1,3-dioxane. It contributes to the overall aroma, often described as having a "green" or "fruity" note.

It is formed from the alcohol 1,3-octanediol in apples, and the appropriate aldehydes and ketones, which are produced by yeast during fermentation of the apple juice. Andrew Lea discovered this in the 1980s onwards and also by a reseach group for Pernod-Ricard. It is now patented and commercialised.
