It's 28C in the kitchen, and I'm beginning to regret my promise to cook up some pork for tacos... I could have done it outside in the #PelletGrill, but it is all too late for that now (and I don't like to use the grill on really hot days, because I don't want the neighbours freaking out about smelling smoke). Guess I'd better fire up the #PressureCooker...

A rectangular, black roasting tray, with pale yellow chunks of zucchini, deep red wedges of tomato, greyish anchovy fillets, garlic cloves and diced onion. Everything has been doused in olive oil, and sprinkled liberally with herbs and spices. The arrangement is almost grid-like.

I've invented a use for all the tomatoes that are ripening: fake putanesca!

🍅 Tomatoes (quartered)
🧅 Onion (finely diced)
🧄 Garlic (lots)
🐟 Anchovies (also lots)
🍸 Olives (couldn't find an emoji)
🥬 Oregano (ditto)
🌶️ Chilli flakes (just enough)
🧂 Salt, pepper & olive oil (maybe the right amounts?)
🚬 Smoke grill (until it is all fall-aparty)

@bastardsheep No - it needs to cook a little longer.

Here it is after 9hrs (probably 6 of those hours were at ~120C). It's under foil as we speak.

The once orange beef is now a deep - almost black - shade of magenta. The plums and tomatoes have almost completely dried out.

This weekend - to honour the passing of my Dad, and also just because I can - I will be cooking a 1.1kg rack of beef short ribs. Details are a little unclear at this early stage, but I expect it'll be slow-roasted in the #PelletGrill, on a bed of onion, cherry tomatoes & over-ripe blood plums.

I may decide to post photos.
