Haven't shared any bread pics in a minute --- and I've baked six loaves in just a few days!
I baked this last night, RLB's "Basic Sourdough" from the Bread Bible. Was really surprised it didn't rise much at all and so expected it to be a dense inside, but equally surprised to find a pretty nice crumb.
Flavor is *great*.
Recently my bakes have been based on 600g flour and 80% hydration.
The variation here was a proper flour & water, as the books describe autolyse of 70 minutes before adding salt and starter.
The dough was a gloopy mess.
Initially even worse to work than the 100% hydration pan de cristal a few weeks back. It stuck to the banneton and more flopped out onto the baking sheet.
Little rise in the oven.
Nice but not spectacular final result.
@rootsandcalluses I donât have an air fryer, but Iâm curious to see the result. Air fryerâs are relatively efficient compared to a large oven. #sourdough

Should I go over baking sourdough with an air fryer? Anyone curious? Or is there no overlap between people who want to bake their bread but don't have a proper oven?

Sitten lisäsin siihen samaan kulhoon 150g luomu vehnäjauhoja ja 150g hieman lämpimämpää kuin kädenlämpĂśistä vettä. Sitten sekoitin tästä tasaisen moussen ja kaavin lasiseen purkkiin. Laitoin vielä viivan tussilla merkiksi purkin kylkeen, jotta näkee miten juuri lähtee nousemaan ja toimimaan. Nyt unohdan hänet pariksi tunniksi pĂśydälle, katsellaan sitten elämää eteenpäinâşď¸
