Snagged a bag full of Maryhill peaches to make a southern peach cobbler. Just popped it into the oven. Fresh peach cobbler is the paradigm, the platonic ideal, of cobbler. And it must be southern-style, which I recently saw called a “buckle”. It’s not a buckle. It’s a cobbler. No fucking biscuit dough, no strips of pie crust dough. We moved to Mississippi from Los Angeles six years ago for the space to grow our business. We had no idea the pandemic was just around the corner—but when it came, we were grateful to spend lockdown stretching our legs in hay fields instead of being cooped up in a tiny city apartment. While we sometimes miss the energy and culture of the city, this rural bubble has given us the freedom to hunker down and create, as well as the physical space to run a truly independent business. But we still travel whenever we can to try to enjoy the best of both worlds.
