This is about 28-30 hours after start, when I removed the slab from the incubator and put it on a raised rack at room temperature. Once the fungus is well-established, the slab is noticeably exothermic and must be take from the incubator even if the warming mat is off.

I've started a new batch of tempeh, an old favorite: black lentil & purple barley. I use a 50-50 mix, measured by volume before cooking, 3.5 cups total. This is a good-sized batch for the Ziplock Fresh Produce bags I use for fermentation.
I cook barley & lentils separately, as their cooking times differ (about 13 minutes for lentils and around an hour for barley — I'm not sure, since I use a grain cooker that times itself).
The new batch should be ready for harvest by Thursday.
I finally conquered my personal fermentation nemesis - tempeh! I needed SIX different attempts at making it to finally get it right. And it was delicious 😋 I'm definitely gonna make more of it in the future

Jerusalem artichokes ("terpiro" (earth-pear) in Esperanto) arrived in the market this week, and I immediately bought some to make a stew. They are very high in inulin, an excellent form of dietary fiber.
I also recently discovered leaf celery (photo below), and included that (along with rainbow chard) in the stew

Uit onderzoek van de universiteiten van Loughborough en Oxford uit 2008 bleek dat consumptie van het aan tempeh verwante #tofu door senioren tot verslechtering van het geheugen lijkt te leiden, als formaldehyde als conserveringsmiddel is gebruikt, maar het gefermenteerde #tempeh kan door de grote hoeveelheid aanwezige folaten juist een positief effect op de hersenen hebben.
Mijn positiviteit over deze specifieke tofu is nu toch wat getempehrd.
