It's a warm day, perfect for #yoghurt soup. Here's how I make it: finely chop cucumber, red pepper, garlic, fresh dill and fresh mint (or נענע) into a bowl. Add plenty of salt and pepper. Add your choice of plain yoghurt and mix well. Let it sit in the fridge for at least an hour so the flavours infuse the yoghurt. Mix again before serving. #recipe

Eating Yoghurt could lower your Risk of Bowel Cancer, Evidence shows.

The emerging evidence suggests that regular yoghurt consumption may have a protective effect against certain aggressive forms of colorectal cancer by modifying the gut microbiome, the natural bacteria that live in the gut.

The gut microbiome plays a crucial role in overall health, influencing digestion, immune function and even cancer risk. The gut bacteria can live inside cancer itself, and in general a healthy balance of these bacteria is thought to be essential for maintaining a strong immune system and preventing inflammation, which can contribute to cancer development.

While yoghurt did not directly lower the risk for all types of colorectal cancer, those who at two or more servings of yoghurt per week had a lower risk of developing "Bifidobacterium-positive proximal colon cancer", a type of colorectal cancer that occurs in the right side of the colon and has one of the lowest survival rates. This new work also validates and builds on previous studies showing similar findings.

Several mechanisms have been proposed to explain how yoghurt might reduce cancer risk. One key mechanism is the modulation of the gut microbiome. Yoghurt's probiotics can enhance the diversity and balance of gut bacteria, potentially reducing inflammation and levels of cancer-causing chemicals (carcinogens).

Started a batch of and of just before supper. Don't stand still too long around here or I might ferment you.

The toughest part of sauerkraut is massaging the salt into the shredded cabbage if the cabbage has been in the fridge. Very cold on the hands by the time you're done. Ouch!

Here are pictures of another batch of thin Danish #yoghurt being seperated into liquid and solid, something like whey and Greek yoghurt. The first picture is how the yoghurt like like to begin with and the next one is the solids.. the final pic is the liquid that strains through. This time I used a kitchen towel which is a bit to tightly woven. Cheese cloth is better - it soaks up of the liquid

Been trying to find a good #vegan #yoghurt. Most of the available brands are sweetened and flavoured, which is not what I want, there's two plain yoghurts easily available here: Cocobella, is nice enough but it tastes more like slightly insipid coconut icecream than yoghurt, almost completely lacking in tang. The other plain variety I can get locally is Coyo, which does approach real plain yoghurt in flavour, but is eye-wateringly expensive.
So I'm wondering, do people make their own?
A quick duckduckgo tells me that the most common way is to add probiotic capsules to coconut milk and letting that ferment. Seems to be a rather scattershot approach; I guess the bacteria that can eat whatever sugars are in coconut milk will survive (and convert them into … ?), but I'm thinking that using the culture from the commercial varieties might be a better plan, maybe with some agar to help it set—Cocobella is thickened with agar and it approaches the mouthfeel of dairy yoghurt, Coyo has starch in it and is a bit more junket-y.

🍎🍌🫶🏼
1 nashi
1 apple
1 banana
50g cooked beetroot
1 tablespoon cashewbutter
2-3 tablespoons greeek yoghurt
1-2 tablespoons honey
some granola for the topping
HOW TO: just mix up half the banana, apple and nashi with the remaining ingredients until it is smooth and decorate your bowl with the granola and the remaining fruits. 🩷 will try to level up my picture game again, promise!

It's a -making day!

Heated up milk, and cooled it down again, then mixed in my last container of yoghurt from the last batch. Loaded up the little yoghurt incubator and set it to run until about 6 am tomorrow.
