Only 15 days left before release. I'm adding the last QoL features such as unlocking levels as whole chapters instead of one by one so they don't have to be completed in a strict order if you're stuck on one.

@midnightspire to be honest, I was quite surprised with how well Unity was handling this, especially as the optimization wasn't done for the purpose of running the video as fast as possible but making the levels as light as possible.
Ie. there's no pooling (which could make it faster, but would use more space in memory) and so 5-20k game objects are created/destroyed per frame of the video but as those objects are lightweight (only transform, mesh and renderer) it still runs fine.

Loading time was improved 4-5x through mostly reducing the number of objects, generating lots of prefab variants for walls/floors & using more optimized collections (lists ain't it).
There's still some further optimization that could be done but would be pointless considering the game's needs.

It runs in 80x60 30fps in realtime and with the same code as the game's normal levels (only with some overhead to extract frames from the video as it plays).
Levels in the game are already loaded at runtime from images so a video isn't much different.
My minimalist puzzle game can now read videos just as if they were levels.
And as the game is about eating fruit, what better fit to showcase this than a video named after a fruit.
