@greg I just roast this on a sheet pan or wire rack tray. If you’re worried about some smoke in your kitchen, set it on a bed of root veggies. You get schmaltz covered roast veggies then
@greg oh and obviously let it come up to room temp before roasting.
@greg it’s the best easiest thing in the world! Take a whole chicken, dry it outside and in with paper towels a lot. You want it dry AF. Coat the outside and inside with kosher salt like 1-2 tablespoons worth.
Set it uncovered in the open air in your fridge for at least a day preferably two. Roast it at 450 for I dunno 20-30 minutes and then drop the temp down to 375-400 until it’s done. Juiciest most amazing chicken you’ll ever eat.
