My wife Is a pastry chef, and the cafe here in Bavaria she has been working with asked her for... a New York-style cheesecake. After she stopped laughing (she's always looked down her nose at American-style cheesecake, saying, "If you want to eat two pounds of Philadelphia, go to a deli.") she set to it. Problem 1: In Germany, they do not have Graham Crackers, and one needs them for the crust. So she broke out her old Graham Cracker recipe and made, then crushed them, added a little extra sugar and melted butter and baked it for a bit, et voila! (er... und fertig!). (Of course, vegans could use a food processor and crush cashews and almonds, then add coconut oil to make it vegan, then substitute honey or date sugar instead of processed sugar cane - won't help you with the Philadelphia part, but hey, *you're the one who wanted to be vegan, amirite?)

Anyway I thought it was magical, as I did the time she needed, and therefore whipped up a batch of English muffins. I am easily entertained, and she is a good baker, as evidenced by the fact that a high-end German cafe keeps buying her stuff.
