@wfpb it makes me ridiculously happy to get some tofu into smokey maple marinade before lunch on a Monday. There are both slices for sandwiches and cubes to add smokey flavor to salads. It's just 1/4 cup low sodium soy sauce, 2 tablespoons maple, 1 tablespoon of nutritional yeast, 2 teaspoons liquid smoke

@wfpb I had a colonoscopy and endoscopy on Monday and I started the low FODMAP elimination diet the next day. Staying vegan on it is very difficult, especially since I also avoid all oil. Most of the food has been lackluster but I am really happy with this overnight oats. I omitted the almond butter and used 2 tablespoons of maple in the blueberries (with just a bit of cornstarch to compensate for the extra liquid). The blueberries taste like blueberry pie.

@wfpb It's bowl night! Tonight, we're having giant taco salads. The hot elements: taco seasoned roasted sweet potato, cauliflower and beet, mesquite pinto beans, quinoa. The cold elements: baby spring lettuces from our farm share, cucumber, red pepper, carrots, avocado and homemade oil-free tortilla strips and a cilantro lime cashew cream dressing.

@wfpb Wednesday night is bowl night at chez Kamikat. Tonight's bowl is Moroccan inspired. I like the spice mix on the chickpeas, but I'm not sure about the dressing. A standard lemon tahini dressing might have worked better.

@wfpb Does anyone follow the low FODMAP diet while maintaining their plant-based lifestyle? My doctor wants me to do the elimination and reintroduction phase but is perplexed by my plant based lifestyle, while at the same time recognizing that it cured my type 2 diabetes and is more important than "fixing some tummy troubles". Is it possible to stay wfpb while doing low FODMAP?

Made some steel-cut oats as there wasnโt enough rice.
Iron skillet cooked portabella mushroom caps, kale, black beans, onion, red pepper, and more mushrooms. Flavored with a shawarma spice. Sliced the caps and put it all in two whole grain tortillas. It turned out great.
@wfpb We got mustard greens in n out CSA share this and didn't know what to do with them. This is what I made. It wasn't bad, just boring. What do you like to do with mustard greens?
