I think it's just laziness
People don't actually oppose the GUI, it's just that the market is saturated with utter dogshit and at some point you become kind of sick of wasting your time with them
If you know what you're doing, the underlying tech is easier to work with then some abstraction over it -
While good GUI Design always requires a properly organised Team
And tbh, as for editors, neovim is just a crazy good experience for a programmer
It's just the best IDE i've ever used, and it even works through the horrendous RDP connections we have to use at work
Instead of clicking through a GUI that's in a lagging Screenshare, i can use ssh and work at comparative lightspeed
Honestly would hate my life without it
