Do you blet all the medlars the same period of time? Don’t you have a difference in ripeness? Don’t you get mould on some medlars?
Because the medlars are not very juicy where do you macerate them in?
What part do you put in to the muslin bag? The inner fruit? Peel? Crown? Seeds?
