This Chianti falls under Italy’s Denominazione di Origine Controllata e Garantita (DOCG) classification. The DOCG designation means that the requirements for this wine type have been tightened in terms of the use of grape varieties and their composition, in relation to DOC. Harvest yields must also be less per hectare and there are additional technical requirements, as well as a guarantee of quality. Additionally, Castello uses sustainable methods in their wine production.
As this bottle is Chianti Classico, it was aged for one year.
A translucent cherry / raspberry on the pour, followed by a 40-minute decant. Deep purple in the glass with a salmon rim. Nose of cherry, vanilla, hint of black pepper. Dusty cherry on the palate, with perhaps some raspberry, leather, dried herbs and peppery spice present in the medium-high acidity. Dry, semi-bold, medium-bodied. Fine-grained tannins. I’m liking it.
We had it with a mix of Italianesque foods, including Pasta con Fagioli, Fagioli Alla Veneziana, Cod with Pesto, braised potatoes and Caprese salad. The wine pairs really well with the Pasta con Fagioli. A very enjoyable combo. It’s acceptable with the potatoes and goes less well with the sweet and sour Fagioli and fish.
Overall, I really enjoyed this Chiati and would certainly buy it again. It’s price point is great. Pick up a bottle if you find it.

Cycling Tuscany Day 4: BOAR ON THE FLOOR. Today's route encapsulated the stereotypical postcard Tuscan scenery and included a wild boar and little boarlets sighting. We wound through a Chianti and rolling hills of vineyards and olive trees, punctuated by castles perched on hilltops. Rain threatened all day long but never came. For our last night of the tour, our accommodation was a cute stone bed and breakfast hidden in the rolling countryside a few kilometers from Gaiole in Chianti. A formidable 1.5 km gravel climb to get there was our final challenge, the. we were rewarded handsomely with a spa, pool, and intimate restaurant and beautiful peaceful surroundings. The rain came later in the evening and we fell asleep to the whoosh of a steady rain outside our door.
