Making Butter Chicken Soup today, and I am at the everything-but-the-chicken phase.
2 cans coconut milk
2 jars butter chicken sauce
2 big cans diced San Marzano tomatoes
1 lg pkg spinach leaves
4 chicken breasts or 6 thighs, boneless
1 pks mushrooms, chopped
2 med white onions, diced (or one large red one, for a twist)
Sautée chicken, mushrooms, onions. Add to crockpot. Add coconut milk, butter sauce, tomatoes, spinach. Cook, stirring spinach down repeatedly, for 8 hrs on med or low.
