with Spinach, Raisins & Tahini Dressing and WOW it was good.

A roasted poblano pepper stuffed with colorful filling surrounded by a tangy yogurt and almonds

Oooh! 3 years ago today, we started getting #BlueApron. Best decision ever!!! We still get the deliveries and I still make all the tasty meals. I haven’t posted about them lately though. Sorry.

Tonight’s dinner, c/o #BlueApron, was Ginger Beef Burgers & Soy Mayo with Roasted Carrots & Marinated Cucumbers. So yummy!!

Plated dish. Ginger and scallions mixed into the meat. The burger build: bottom bun, mix of soy glaze, soy sauce, and mayo, the burger, marinated cucumbers, top bun. Roasted carrots topped with scallions.

Tonight’s dinner, c/o #BlueApron, was Salmon & Lemon-Pepita Pan Sauce with Garlic Rice & Sautéed Veggies. This was absolutely delicious!

Plated dish. Salmon topped with a pan sauce made with scallions, pepitas, lemon juice, brown sugar, and tomato chipotle butter. Sautéed yellow bell pepper and green beans. All on a bed of garlic rice.

Last night’s dinner, c/o #BlueApron, was Oven-Baked Tomatillo Chorizo & Rice with Tomatoes & Golden Raisins. OMG yum!! The raisins added a delightful pop of sweetness.

Plated dish. Mix of rice, tomatillo-poblano sauce, spinach, grape tomatoes, golden raisins, and chorizo, topped with melted cheese and a dollop of sour cream.

Tonight’s dinner, c/o #BlueApron, was Sheet Pan Meatball Pita Sandwiches with Harissa Mayo & Roasted Carrots. Yummy yum yum!

Plated dish. Pocketless pita slathered with garlic yogurt and topped with 3 meatballs, roasted poblano, and onion. Roasted carrot fries. Not pictured: harissa mayo for dipping.

Tonight’s dinner, c/o #BlueApron, was Crispy Tilapia & Bok Choy Rice with Sesame-Yuzu Sauce & Peanuts. Wow! This was amazing!

Plated dish. Togarashi seasoned tilapia on a bed of rice and sautéed Bok Choy. Sesame-Yuzu sauce drizzled on top of the tilapia. Garnished with peanuts.

Tonight’s dinner, c/o #BlueApron, was Crispy Skin Trout with Salsa Verde & Farro Salad. OMG Yum!

Plated dish. Trout on a bed of farro mixed with sautéed zucchini, onion, rehydrated golden raisins, and castelvetrano olives. Trout topped with Italian salsa verde. Lemon wedge on the side.

Last night’s dinner, c/o #BlueApron, was Kung Pao Chicken with Rice, Broccoli & Peanuts. Yummy yum yum!

Plated dish. Chicken and broccoli tossed in a spicy sauce on top of rice. Garnished with scallions and peanuts.

Tonight’s dinner, c/o #BlueApron, was Blackened Tilapia Sandwiches with Potato Wedges & Spicy Ketchup. This was absolutely delicious!!

Plated dish. The build: Bottom roll, slather of Dijon and mayo, garlic dill pickle chips, Cajun seasoned tilapia, top roll. Roasted potato wedges. Not pictured: Spicy ketchup.

Last night’s dinner, c/o #BlueApron, was Oven-Baked Squash & Black Bean Tacos with Sour Cream & Crispy Onions. This was amazing! Smoky and spicy from the chipotle paste and guajillo sauce.

Plated dish. 2 flour tortillas filled with black beans, butternut squash, spinach, melted cheddar and Monterey Jack cheese. Topped with sour cream and crispy onions.

Tonight’s dinner, c/o #BlueApron, was Couscous-Stuffed Poblano Peppers with Spinach, Raisins & Tahini Dressing. This was incredible! So many different textures and flavors.

Plated dish. Roasted poblano pepper stuffed with couscous, spinach, golden raisins, roasted red pepper, feta, and tahini dressing sitting on top of lemon yogurt. Garnished with more feta and sliced toasted almonds.

Tonight’s dinner, c/o #BlueApron, was Crispy Skin Trout with Baked Feta, Couscous & Vegetables. Wow! There was a lot going on in this dish. Really yummy!
