"Ginger, or adrak in Hindi, is a spice deeply rooted in Indian cuisine. This Indian tea is a must-have in every Indian household and is widely enjoyed across the world.
Tea made its way to India during the British colonial era. However, Indians quickly added their twist, infusing it with spices to create what is now globally recognized as “masala chai.”
* Masala chai is made using a special chai masala blend of warming spices.
* Karak chai is an Indian, Pakistani and Qatari tea. It is bold and strong but uses fewer spices than masala chai.
* Elaichi chai is a cardamom milk tea prepared with freshly crushed cardamom and sugar.
Unlike herbal teas, Indian chai is simmered for a long time to develop a stronger tea."

Out on a walky errand and ensured we diverted slightly to the "Spice Divine" grocery and restaurant, purveyors of a nice masala chai.
Got a couple of those to bring home with us and it's a tasty treat.

Making Chai
There is a beautiful ritual to making the best masala chai, and it is the ritual that makes making chai such an amazing and calming occasion. It varies a little in each family but involves
⏲️ Simmering the water and spices for a couple of minutes
⏲️ Adding the sugar and simmering until dissolved
⏲️ Adding the tea and simmering for a couple of minutes
⏲️ Adding the milk and bringing close to a boil
⏲️ Aerating the chai by "pulling" it or doing a double boil
⏲️ Simmering the milk for 5 or so mins to evaporate some and make the milk smooth and creamy.
⏲️ Strain and serve. Perhaps with a Parle-G biscuit or two.
In some families the order changes slightly - the sugar is added later, for example. If using tea bags they are removed after a couple of minutes simmering.
This link describes a process that is very similar to how I make it. It also includes reasons for simmering the spices in water first, and aerating the chai. She describes the pulling and boiling methods.

Should I use a sweetener?
Traditionally, masala chai is a sweet drink. Some recipes will include 1 Tblspn 😮😵💫🥴sugar per cup, but please sweeten to your own preference. Sugar enhances the flavour of the spices. Plain white sugar, brown sugars, jaggery, palm or coconut sugars can be used. Avoid honey.
Of course it is perfectly ok to go without sugar.

What spices should I use?
It is very common to use cardamom, cloves and cinnamon in your chai.
After that you are limited only by your imagination. A selection of star anise, fennel seeds, nutmeg, tulsi, star anise, mace and black peppercorns is also usual, but in very small quantities to prevent overpowering the chai.
Many people (me included) love dried or fresh ginger and it is particularly good in Winter. For health, a pinch turmeric and a pinch black pepper are wonderful and also great Winter spices. Other spices can include black cardamom, chilli, coriander, rose petals, and liquorice root. A small amount of cumin is also loved by some people.
Herbs can also be included - tulsi is popular and I have seen ones including lemongrass.
The traditional composition of spices often differs by climate and region of India. For example, in Western India, cloves and black pepper are expressly avoided. The Kashmiri version of chai, brewed with green gunpowder tea, has a subtle blend of flavourings: almonds, cardamom, cinnamon, cloves, and sometimes saffron. In Bhopal, typically, a pinch of salt is added. Some parts add a little ghee to the chai.

What milk should I use?
In India buffalo milk or cow’s milk is used. Outside of India, use any cow’s milk – full fat, low fat, skimmed, powdered, evaporated or even condensed sweetened milk that has been diluted with plain milk or water. Full fat milk is the best (in my opinion). If using condensed milk, there is no need to add extra sweetener. If you prefer to drink chai without milk, just replace it with water.

What tea is used for making chai?
It depends. Any sort of black tea can be used. The trick is to balance the tea, spices and sugar flavours to your preference, without one overpowering the other. You can even make a drink with the milk and spices but without the tea.
Masala Chai is often made with Assam , Darjeeling or Nilgiri tea. Although different in flavours, they are commonly used in different parts of India. Nilgiri is a favourite of South India.
Others prefer English Breakfast Tea, or Danedar, Tetley Blends, Taj Mahal or Wagh Bakri brands. It all depends on your taste preferences and family customs.
In Kashmir, gunpowder tea is used.

The word chai originated from the Hindustani word chai which was derived from the Chinese word for tea, cha. Chai just means tea. Masala chai indicates the inclusion of spices to make that wonderful drink we all know, and love.
The making of Chai uses techniques that go against all of the rules of British-influenced methods of brewing tea. It is *brewed* rather than seeped, in either milk or water (or a combo). The tea that goes into making chai is simmered. It is sweetened as a matter of course. Chai tastes nothing like a regular English milky tea.
There are distinct methods or rituals for making chai, but they do vary from region to region and family to family. Each hou sehold will make chai slightly differently.
