Great to catch up with Adam Wells at the book signing session of CiderCon. Adam is a great ambassador of cider writing extensively in magazines etc. This is his first book on perry and the first book devoted to perry since the classic Perry Pears 1963 Luckwill & Pollard. Should cider have Tannins? A session at CiderCon. No brainer for me growing up on “West Country” ciders from England but it was great to partake in the tastings and discussions. Ciders in my mind must display apple characteristics so yes to tannins, polyphenolic aromas, and malic acid. Other fruits can be added, early cider makers often did, but should not dominate. #cider #CiderCon #ciderCon2025 #apples #tannins
