I wanted to cook aubergines today but somehow I tricked myself, there were none in the fridge even though I was sure that I had bought them. 🤔 However I had sardines in sesame sauce (yum, all the way from Japan via kokorocares.com), king oyster mushrooms and Pak Choi, so there were possibilities.

I decided to do something similar to the aubergine dish with the mushrooms, I halved and fried them and then put a miso glaze and Shichimi Togarashi on top and grilled them in the oven - I thought they were very good. The Pak Choi got blanched and served with a leftover portion of the aromatic sauce that I like so much.

In addition I dug out another product I had in the cupboard (also from kokorocares.com), a black vinegar paste that we used as rice seasoning and my husband was really happy with that one.

We tried out a Wafu pasta dish from the Kokorocares.com website today. (Wafu pasta is western style pasta with a Japanese style sauce.)

I made a few little changes, I replaced the zucchini with languishing kohlrabi and May turnip from my fridge, added more olive oil to create a proper emulsion with the pasta water, and at the end also added a dollop of Spicy Chili Shiitake Miso to the sauce that already had plenty of “mushroom broth tea”powder in it.

It was all full of umami and we really loved it. My son also simply loves the pasta Mondays (that are really Meatless Mondays) ☺️

This was so simple, yet so satisfying: Japanese Somen (very thin wheat noodles) with pork belly and cabbage pieces fried in sesame oil. Seasoned with Dashi powder, pepper and salt. A few drops of Rayu (also called Layu, a chilli oil) make this perfect.

This must be one of the first Japanese recipes I tried when I started my food box subscription with Kokorocares.com in 2020. It convinced me then that Japanese food was for me and it still works for me today. 😊 At the time we were very careful with the Dashi as we were not used to its strong aroma. These days we can’t get enough of it.

The other day I stumbled across a video that showed how to get the bones out of a chicken drumstick relatively easily. As my guys hate meat with bones 🤷🏼 and I prefer the bits with bones because the meat is better, this seemed to be a good compromise to get the meat I like and for them to stop complaining about how cumbersome the bones are… 🙄 So in the end I had some nice flat drumstick meat with skin and decided to bake them in the oven seasoned and slathered with chilli jam. It took hardly any time for the oven thermometer to tell me that the chicken meat had reached the necessary temperature and I gave it another five as the other food items on the hob still needed finishing.

Our sides were Kiriboshi daikon coleslaw with Napa cabbage, mayonnaise and mango mustard; and an utterly delicious Pak Choi/mushroom salad.

All in all this was a success even if the chilli jam chicken didn’t match the Japanese side dishes that well. 😜

I was so glad when I realised that my latest seasonal Kokoro Care package contained a pack of Takana (pickled mustard greens). We’ve had this before and it makes for awesome egg fried rice!

To bump it up somewhat (we are three, the pack is for two) I added a yellow pepper and a deseeded green chilli. In addition I fried some chopped fresh radish leaves with garlic, they tasted almost like spinach.

My guys were happy with this Japanese style Friday meal:
🥢 Miso soup
🥢 Fennel and carrot stir-fry
🥢 Minced meat and cabbage with Gochujang
🥢 A fried green chilli with salt 🥴
🥢 Japanese rice with Simmered Hijiki Seaweed (from Kokorocares.com)

The minced meat was apparently the favourite (Gochujang always works) but the Hijiki Seaweed also made an excellent impression too as it tasted quite meaty without a bit of meat in there. The stir-fry with soy sauce and oyster sauce was appreciated.

The chillies were an afterthought (as I have too many in the fridge) but just like yesterday this one bit me once I got to the seeds. No fun. 🤷🏼

This was a lovely meal. The different types of freeze-dried soups from Kokorocares.com are always excellent; the pork belly had browned nicely and despite not looking too great on the photo, it was very yum; Pak Choi is delicious in any what way it’s prepared; and the Shiso seeds gave the plain rice some oomph, if you know what I mean. 😅

No one in this house apart from me will eat octopus, so I’m having this two portion packet for octopus rice (that I got via my latest subscription box from Kokorocares.com) all to myself. The contents of the bag get cooked with the rice, easy peasy.

In addition I fried some carrot matchsticks and Padrón peppers, and made a small Napa cabbage salad with shio konbu (salted algae), katsuobushi (dry tuna flakes) and chirimen (mini fish), again all for myself. It was a good meal. ☺️

We tried Honey Pork Belly from Justonecookbook.com and as always we were not disappointed. Sweet and savoury is always a winner in my book. The whole meal came together very well and I also really liked the rice seasoning.

My guys were VERY happy with their lunch today. 😊

I prepared:
🥢 Shio Koji Chicken (my Shio Koji came from Kokorocares.com)
🥢 Japanese aubergine with Sesame Ponzu Sauce
🥢 Japanese rice with chopped pickled plums

Have you ever heard of Shio Koji? It’s my favourite fermented ingredient to marinate chicken meat and if you can get hold of some you should definitely try it out. The meat comes out super tender and is so flavourful! I really loved both of the recipes I found for today’s meal, and of course they are from Justonecookbook.com.

We all agreed, this Takana (mustard greens) fried rice dish from Kokorocares.com is one of the best fried rice dishes there is. I’ve got a recipe where I tried to reconstruct my own version of this as I can’t always get the original Takana vegetable pack from Japan, but this time we had the proper one and despite my bulking it up with more vegetables it was just wonderful.

The main ingredient for the Takana mix is mustard greens (something I still have to find in a German shop). But there are also red pepper and ginger in there. Therefore I decided to add very finely chopped mild red chilli and bell pepper and also some takuan (yellow pickled daikon). They worked perfectly and gave the dish little flecks of bright colour which I enjoyed.

I wanted to make an udon soup dish and when I read that I need dashi I thought, don’t I still have some instant soup packages from one of my kokorocares.com deliveries left in the shelf? I pulled out the pack of Kyushu Dashi Hot Pot Soup from my winter box and when I went through the ingredients list (flying fish, bonito flakes, shrimp and obviously more) I instantly changed my mind. No more simple udon soup but hot pot it was!

I got my induction cooker for the table out, put the four packs of concentrated soup base in a saucepan with the right amount of water and heated that up.

Of course I also got out a range of things to put in there and had prepared them:

🥢 Napa cabbage, the top of the head in one piece 😅
🥢 May turnip, sliced thinly
🥢 Carrot, cut into “flowers”
🥢 Spring onion, in 4 cm pieces
🥢 Spinach, chiffoned, to be used like a topping
🥢 Shimeji mushrooms, roughly separated
🥢 Smoked tofu with almonds, sliced
🥢 Thin pork meat rolls (from Spain!)
🥢 Chinese dumplings with tasty fillings

Yes, there were also udon noodles, and I decided to make this a little more Chinese by adding a punchy dipping sauce with sesame oil, soy sauce, vinegar and chilli pul biber.

I think the whole affair cooked for about ten minutes and by that time it was perfect so I turned the temperature down and called the family.

I don’t know how but this was sooooo good and so perfect on a cold almost wintery day! I really think it was the absolutely delicious soup base that made this, we finished it all in one setting. (I remember having a flying fish based soup product from Kokorocares before and I loved that too.) But I also have to give a honorary mention to the May turnip which was exquisite and the Spanish pork that had a great taste.

Are you familiar with Japanese, or better, Okinawan Fu? It looks like sliced white bread and in a way that’s what it is, but it’s made entirely of wheat gluten. In Japan it’s used to make all sorts of cooked dishes. I really should have taken a photo of the little bread slices before cooking them as it’s completely unrecognisable in my dish after I cut it into 1 cm cubes and soaked it in egg. We quite like it.

The dish I made is called Fu Chanpuru, which essentially means Fu with something mixed (in this case stir-fried). I loosely followed a recipe but replaced the sausage with rehydrated shiitake mushrooms, the fish based dashi with shiitake dashi (to make it vegetarian), and also added some chiffoned baby spinach and a little leftover shredded Napa cabbage.

As I had too many bean sprouts, I used the rest of them as salad with a leftover dressing of sesame oil, red wine vinegar, soy sauce and sugar.

At the end I decided that I also wanted a mashed up pickled plum with me rice, as I like the tangy kick from it. My husband opted for red cabbage kimchi instead.

First of all, so many new followers over the last week, that’s a bit scary, but welcome to my cooking adventures! 😅 My tastebuds like Japanese, Indian and East Asian cuisine and after falling in love with food at a Bangladeshi friend’s house I simply started cooking from recipes at some point and this opened up a new world for me. I hope I can inspire at least a few of you to try out either some of the recipes I keep trying myself, or to simply sample something completely new should you stumble across something that you have never tasted before in your supermarkets or even better on a market. I usually attempt to find a suitable recipe online. I’m also not afraid to substitute hard to get ingredients with local ones, reading up on what might be a good match. You have to work with what you can get or find in your fridge. 😄 I think most of my cooking is fusion food, where you combine products and ideas from different food cultures to make them your own.

The meal in the photo was a typical “what you find in the fridge” affair. There were many fresh vegetables that needed to go: okra, pak choi, napa and red cabbage, carrots, spring onion, half a jar of shiitake mushrooms, and also some soy mince based niku soboro (seasoned minced meat to eat with ramen or whatever you fancy). With this my son and I prepared the meal:

This felt like simple but homely cooking - until we got the Japanese mustard out. 😤🤯🥴

I made rice, something akin to Rafute (Okinawan Braised Pork Belly) and an Asian style slaw. I had chosen the pork belly dish because I had ordered Karashi (spicy Japanese mustard) powder and it was used in this recipe.

When my son tried the mustard I had made of that, he instantly felt the heat in his nose and since he never had that experience before he was astonished and somewhat alarmed. 😅 I ended up adding a little of the broth from the meat to the mustard mix to dilute it somewhat more but it still packed a punch that was not to be trifled with! However it was also making this otherwise mild dish really interesting and enjoyable, so all was good.

The tofu cubes tasted a lot like spicy smoked cheese, really nice! Our son shunned the mentaiko since he found out what they are 😆 but my husband loves them.

We compared the two different rolled up omelettes and I think everyone preferred the sesame version but the dashi one was a lot juicier which was nice too.
