This was my favorite dish yesterday - shrimp papas locas: cheddar-bacon potatoes with jalapeño cheese sauce and spicy shrimp featuring Tajín Chile Lime sauce. I loved everything about this. The shrimp had good texture, and the potatoes and sauce were so good. I might need to have this again before the event is over.

This was the Sloppy Joe slider featuring IMPOSSIBLE Beef with cheese. It was ok but didn't wow me. There was green chile in the mix, which I liked but a warning for anyone who doesn't like that flavor.

From yesterday, the sirloin gruyére mac & cheese with black garlic chimichurri and garlic butter crunch from . Really nice flavor all around. The mac and cheese was good, but a bit heavy because of the richness of the cheese, so we held off on the other mac and cheese dish until another day.

I got some of the graham cracker crust at the bottom but then I stopped because it was pretty sweet, and I really liked the tartness of the lime elements. 2/2

The favorite thing I've had today is the lime parfait from : Layers of graham cracker crust, lime cream cheese mousse, and lime-orange gelée topped with chantilly. The combination of the lime cream cheese mousse and the lime-orange gelee made for a pronounced lime flavor which was wonderful. 1/2

The portion of the chicken taquito ahogado, served in salsa verde with Spanish rice, avocado crema, sour cream, pickled onion, cotija, and cilantro. This presentation was not so much the "drowned" version that the name of the dish would imply, but I thought it was pretty tasty overall.

The chipotle chicken wasn't that exciting, though the salsa verde had really nice flavor, and I liked the inclusion of the grilled green onion.

At the normal price of $9.75, I don't think it's worth it, but with the discount on the making each dish $7.25, that helps a lot. 2/2

Jumping into the with lemon pepper wings with garlic ranch. The lemon pepper seasoning on the wings is really good, but the ranch dressing barely has a hint of garlic, so "garlic" ranch would be a more apt description.

Picked up the mandarin orange cream puff (filled with citrus cream and mandarin compote) from the festival at on Saturday to bring home. Finally had a chance to try it today. Pretty *and* delicious. I really liked the filling, and it tasted like it had orange peel in it, which gave it a very different flavor than just the flesh or juice of the orange.

Red panda bao (jumbo pork and vegetable bao with chile-garlic sauce) from the festival at yesterday. The chefs at the resort have definitely learned how to make a proper bao - the taste and texture are perfect. The seasoning on the filling was spot on for bao as well. The sauce was uneventful. 1/2

Quesabirria egg roll with guajillo pepper consome from the festival at yesterday. I liked the flavor of the meat, and while the consome was thicker than I expected, it was also very tasty to dip the egg roll in.

At the festival at yesterday, we also tried the mini char siu pork shanks with pineapple chutney and rice. We got one piece that was a little shank and one piece that was big enough to be a riblet. The flavor of the sauce was really good, not too sweet. The texture of the pork was very much like Chinese bbq pork. It was a really good dish, especially with the pineapple salsa.

Had some more adventures at the festival at yesterday. The fire chicken wings with sesame-seaweed crunch were definitely very spicy. Needed to take a break eating some cooling things in between, but there was still a lot of flavor. Loved the hint of dried seaweed mixed in with the other flavors.

And I loved that they made their own almond cookie! It's not good for me that this will be available for a month.

This dessert is also available with a tab but it's the same price with the tab, and the regular tab is more expensive than just paying for this regularly. 2/2

Again, another genius idea, to combine Chinese and Korean flavors together. Buying another virtual beverage for an unknown stranger.

I do have to admit that it did make me crave the scallion pancake from one of my favorite restaurants, which I haven't had in a while. Will need to remedy that soon. 2/2

When they first announced the menus for , I was immediately intrigued by the scallion pancake tostada (fried scallion pancake, bulgogi beef, kimchi aioli, and spicy scallion salad) at . It did not disappoint. The scallion pancake was the same flavor as a regular scallion pancake but much thinner and crispier since it was serving as a tostada. The bulgogi beef had really good flavor as well. 1/2
